So, it was requested I post my favorite cooking recipe. This recipe tastes great, takes under 20 min to make, and has good nutritious value. It is also an easy recipe. It was one of the 3 required recipes I made for FCS, and it turned out fine. Surprising, actually, how good it was with my limited cooking experience at the time. Here it is, as requested:
Lemon Orzo Soup This recipe serves 4 according to these amounts. Serving size: 1 3/4 cups of soup Ingrediants: -1 Tablespoon olive oil -3 garlic cloves, thinly sliced -2 thinly sliced green onions -4 cups chicken broth -2 cups water -3/4 cup uncooked orzo -1 tablespoon grated lemon rind (Out of all the ingredients, this one seems least necessary) -1 (15-ounce) can, drained, garbanzo beans (chickpeas) -1 tablespoon chopped fresh oregano -1 tablespoon lemon juice (VERY NECESSARY, if you feel the need to add more, wait until after it is made, then add it, as the flavor will be more apparent) -1/2 teaspoon black pepper (this element is another one I commonly add extra of, same rules apply) -1/8 teaspoon of salt -1 (6-ounce) package of baby spinach (I think frozen is fine, but DO NOT USE CANNED SPINACH) Now, personally, I leave this out because I find cheese distasteful, but if you are a cheese connoisseur, then go for it. -1/3 cup grated parmesan cheese Cooking Heat a large saucepan over high heat. Add olive oil to pan; swirl to coat. Add garlic and onions; Suaté 30 sec., stirring constantly. Add chicken broth and 2 cups water; bring to a boil. Add orzo, lemon rind (if desired), and chickpeas. cover and cook ten min., or until orzo is done. Stir in oregano and next 4 ingredients (through spinach on the list). If you wish,top each serving with about 4 teaspoons of cheese. I hope you enjoyed the recipe. Again, if you have any ideas about what you want me to blog about, comment!
